MY BURNT BASQUE CHEESECAKE

Is it Burnt Basque Cheesecake or Basque Burnt Cheesecake? Basta ang alam ko it's called "Basque" because it originated from Basque Country in Spain. 

Anyhow, I've been wanting to buy this cheesecake kaya lang gagastos ako ng 750 pesos! Yan tuloy, Lemon Square cheesecakes nalang binili ko last week. Nagbalak din naman akong gumawa nito sa bahay before kaya lang katamaran is real and hugasin is real kapag nagbe-bake, tsaka I was expecting na complicated ang procedure nya. 

Then yesterday I saw the recipe of Chef RV Manabat on Facebook. Iilang ingredients lang kelangan and the procedure is so easy to follow. Dahil nga known si Chef for sharing honest recipes, I tried it. Di na ako napigilan ni Cy umalis papuntang grocery store kahit malapit na silang magsara. Wahaha.

Compute tayo ng ingredients: Magnolia Cream Cheese 225g - P143, Condensed Milk 300ml - P57.00, All Purpose Cream 250ml - 116.00, 3 pcs eggs - more or less 10 pesos each (meron na kasi sa bahay), 1 piece lemon - 24.00. Di ko na include ung cornstarch.

Total is P370. Paki-check nalang kung tama. ʘ‿ʘ


What I love about this recipe is hindi mo kelangan ng madaming kagamitan. I just used one big bowl and another small lalagyan for the eggs. Hindi magandang gawain ung mag-crack ng egg directly sa mixture mo kasi malay mo ba kung rotten ung isa, edi lagot na.

Anyways, the first thing I did was to beat the cream cheese and condensed milk then I added the all-purpose cream and whole eggs. Really, dali lang. Add add lang ganern.


Last step was to add 1 tablespoon of cornstarch para daw di mag-crack or mag-separate ung cheesecake. I also added a pinch of salt kahit hindi na-mention sa recipe because it enhances the flavor. Tsaka nilagyan ko din sya ng lemon zest. 


For a rustic look, no need mag-effort sa parchment paper. Lagay mo lang. Yaan mo syang crumpled sa sides. I didn't measure my baking pan and amount ng batter na ilalagay ko. Kebs nalang. Basta kasya. Then I set the timer to 40 minutes at 400 degrees F.


Because the oven temp fluctuates, natapos na ung 40 minutes na walang bakas ng "burnt" na ibabaw. I kept adjusting the knob para lang sumakto. I baked it for another 15 minutes and another 15 minutes until I could smell it! Ang saya saya ko when I saw the top already brown! Yey!


Next struggle was kung paano ko malalaman na luto na, and toothpick test won't work. Dapat daw may slight jiggle when you shake it. Yung ibang napapanood ko buong top ng cheesecake jiggly while sa mga nababasa ko naman dapat daw ung center lang. Eh ayoko naman ma-overcooked ung cheesecake kasi baka maglasang egg na sya kaya kahit jiggly ung buong ibabaw nya, gora na. 

After ilang minutes naman outside the oven naging firm na sya. 


Excited na ako tumikim but I had to wait for it to cool down. Much better if ilagay pa sya sa fridge for at least 4 hours bago kainin. Haaaaaay. 

I couldn't wait kaya tikim agad. ◔_◔ 


Napadami ung lemon zest ko pero keri. Yung texture okay din especially nung nilagay na sya sa fridge. Inaamin ko... masarap at super duper approved kay Cy! ♥‿♥
